Ingredients

plain salted butter (base for all flavoured butter)

600mL Bulla Thickened Cream

3g sea salt

Tomato, Basil & Parmesan (good for steak, grilled meats, gnocchi)

1 tbsp finely chopped semi-dreid tomatoes

1 tbsp finely chopped basil

1 tbsp finely grated parmesan

Freshly ground black pepper, to taste

Lime, Smoked Paprika & Chilli (good for grilled corn, grilled meats)

1 tsp finely grated lime rind

1/2 tsp smoked paprika

1/2 bullet chilli, finely chopped

Feta, Lemon, Oregano & Garlic (good for grilled lamb, spread on grilled flatbreads)

15g feta, crumbled

1 tsp finely grated lemon rind

1 tsp finely chopped oregano

Freshly ground black pepper, to taste

Vanilla and Cinnamon (good for pancakes or on toasted sourdough or crumpets)

1/2 tsp ground cinnamon

1/2 tsp vanilla bean extract

Extra cinnamon for coating

Cooking Directions

  • Decant mixture into a fine sieve over a bowl and allow to drain. Gently pressing to help any excess buttermilk be released. For plain salted butter, move on to step 3. To flavour, continue to step 2.
  • Divide mixture into 2 and add flavouring of choice to each and mix well.
  • Roll into a log shape and wrap in baking paper or plastic wrap.
  • Refrigerate until required.
