Chilli Beef & Bean Loaded Fries

Ingredients

Chilli Beef
  • 2 tsp olive oil
  • 1/2 onion, finely diced
  • 1 clove garlic, finely chopped
  • 250g beef mince
  • 1 Tbsp tomato paste
  • 1/3 cup tomato passata
  • 1/2 cup beef stock
  • 125g canned red kidney beans
  • 1/4 red capsicum
  • 1/4 – 1/2 tsp chilli powder
  • 1/4 tsp dried oregano
  • salt and freshly ground black pepper, to taste
Cheese Sauce
  • 20g butter
  • 1 Tbsp plain flour
  • 3/4 cup milk
  • 1 cup grated cheese
  • 200mL Bulla Sour Cream
to serve
  • cooked hot fries
  • coriander sprigs
  • guacamole

Cooking Directions

  • Combine onion and garlic into hot pan with oil, cooking until tender. Stir in beef and cook until browned. Add tomato paste, passata, stock, kidney beans, capsicum, chilli, oregano and seasonings and allow to simmer gently for approximately 5 minutes.
  • In a seperate saucepan, melt butter then stir in flour and cook for 1 minute. Whisk in milk and bring to the boil. Stir in half of the Sour Cream, and half of the cheese. Allow to simmer for 1 minute. Season to taste.
  • Arrange fries on a serving plate, sprinkle with salt and spoon over the beef mixture, followed by cheese sauce, guacamole, dollops of remaining Bulla Sour Cream and grated cheese. Finish with coriander sprigs and serve immediately.
