Smashed Avocado and Cottage Cheese Toasts with Fresh Herbs

Ingredients

  • 4 slices rye or brown bread
  • 1-2 ripe avocados
  • 200g Bulla Cottage Cheese, Original
  • 2 Tbsp mint leaves
to serve
  • micro herbs
  • freshly ground black pepper & salt flakes
  • lemon wedges

Cooking Directions

  • Toast or grill bread slices until golden.
  • Meanwhile, mash avocado flesh with a fork until chunky.
  • Spread avocado over each piece of toast and top with dollops of Bulla Cottage Cheese Original.
  • Sprinkle with mint leaves, micro herbs and seasoning. Accompany with a wedge of lemon.
